Beef Stew with Roast Beef Sandwich

I apologize one and all for not having a soup for you yesterday, but this classic Beef Stew will make up for it I promise!  I had a cream of cauliflower soup yesterday with a wrap and it was delicious.  We were just unable to get everything together as we were in the middle of moving.  It is the go to meal if you are in a hurry or in a pinch as it is a meal you can throw together and just leave to simmer.

For the Beef Stew:

1 1/2 tablespoon olive oil

1 1/2 cup stewing beef, cubed

1 onion, chopped

3 cloves of garlic, minced

2 tablespoon flour

dry red wine

1 1/2 cup beef broth

3 sprigs of rosemary

1 bay leaf

2 carrots, chopped

1 rib of celery, chopped

1 cup baby potatoes, cubed and cooked

To prepare:

Adding the beef broth, bay leaf and rosemary to the wine mixture

Heat the oil in a pot over medium-high heat; add the beef and brown.  Remove from pot.  Add the onion and garlic and cook for about 5 minutes.  Stir in the flour.  Add the wine; simmer for about 3-5 minutes.  Add the beef broth, broth, rosemary and bay leaf to pot; bring to a boil and reduce heat to low, add the carrots and celery and simmer for 2 hours.  Then add the cooked potatoes and season with salt and pepper to taste.  Simmer for another 30 minutes.  Remove from heat and let stand for 5 minutes covered.  Remove the rosemary sprigs and bay leaf.

Roast Beef Sandwich:

1/4 baguette cut in half

2 or more slices of roast beef

1 tablespoon of mayo

2 or more slices of tomatoes

lettuce

cheese

To prepare:

Spread the mayo onto the baguette on both sides.  Lay the roast beef next on the bottom half, then the tomatoes, lettuce and cheese and then put the other half of the baguette on top.

I know that this will be a hit in any home.  I hope you will give this stew a try and let me know what you think.  It is great that you are able to leave it to simmer after preparing it or you could make it in a slow cooker as well.
