Apple Lager Pork Chops with Curried Squash and Potatoes

There is nothing that goes better with pork chops than apples, except maybe beer!  This is a great meal for a cold day.  It is the one of the easier meals to prepare and doesn’t take long at all.  The great thing about this meal is the flavor that the beer lends to the pork chops and apples.  They literally absorb the flavor of the lager so that you taste it in every bite.  If you live with someone who enjoys beer they will love this meal!  It is a new twist on an old favorite.

For the Apple Lager Pork Chops:

2 teaspoons olive oil

4 pork chops

1 granny smith apple, cored

1 bottle of Amber lager (12 oz)

1 teaspoon dried ground sage

1. Add the olive oil to a non-stick fry pan that is large enough to fit all four pork chops.  Add the apples to the pan and cook for a few minutes until golden brown

2. Turn the apples half way through and brown on the other side and then remove from the pan and set aside.

3. Place the pork chops into the pan,

4. Cook for about 5 minutes on both sides and golden brown.  Remove the pork chops from the pan and set aside with the apples.

5. Add the beer and dried sage to the pan and bring to a boil.  Return the pork chops to the pan, cover and simmer for about 10 minutes until the pork chops have cooked thoroughly.  Remove the pork chops from the pan again and then reduce the sauce to about half.

6. Once the sauce has been reduced place the pork chops back into the pan with the apple and stir to coat.  Place the pork chops on a plate topped with apples and then drizzle the lager sauce over top.

1.  Ingredients for the Curried Vegetables:

2 cups acorn squash, cubed

1/2 red onion, sliced

4 baby potatoes, cubed

2 tablespoons olive oil

1 teaspoon yellow mustard seeds

2 cloves of garlic, minced

1 1/2 teaspoons ground cumin

1 teaspoon coriander seeds

1/2 teaspoon turmeric

1 tablespoon brown sugar

2 cups water

2 tablespoons shredded coconut

To Prepare the Curried Vegetables:

2. In a large heavy bottom pot over medium high heat add the olive oil.  When the oil is hot add the onion and saute for a few minutes.

3. Add the mustard seeds and garlic to the onions.

4. When the mustard seeds begin to pop then add the cumin, coriander seeds, turmeric and brown sugar to the pot and cook for a few minutes.

5. Add the squash and potatoes and stir to coat with the seasoning.  Add the water to the pot.  Bring to a boil, reduce the heat, cover and simmer until the potatoes are tender. Serve with the apple lager pork chops and sprinkle coconut over the vegetables.

This is a healthy and nutritious meal that everyone will enjoy.  The curried vegetables are delicious and are even better the next day if there are any leftovers.
