DEL’s Chicken A La King

This is a very special dish. DEL, is my mother-in-law, this is her recipe.  It has been used for years by her.  It is a tried and tested meal.  I think that family recipes are always the best ones because they are familiar.  They are especially great if you are trying to fill a homesick feeling.  This recipe would be great for after Christmas or Thanks Giving if you are trying to use leftovers or if you have a lot of turkey or chicken that needs to be used.  It is an easy recipe and does not take long to put together at all.  This was my first time making Chicken a la king and I am very impressed.  I have wanted to try it  for a long time but for some reason it was never the right time.  I am so glad I finally made it because I now know that this is the go to recipe.  I think the best part of it is the Yorkshire puddings.  Traditionally,  you only see Yorkshires with roast beef so I really like that I have found a new place for them here 🙂

1.  Ingredients

1/2 lb mushrooms sliced

1/2 cup butter

3 tablespoons of cornstarch

2 cups of chicken broth or stock

2 cups light cream

1/2 cup red peppers, diced

1/2 cup frozen peas

2. 3 cups diced chicken or turkey

1/4 teaspoon of both curry and pepper

To prepare:

3. In a non-stick frying pan over medium high heat add the butter and melt.  When the butter is foamy add the sliced mushrooms and saute until golden brown, stirring occasionally.

4. Combine the cornstarch with the chicken stock and then add to the mushrooms, stirring continuously until smooth.

5. Add the cream and continue to stir.  Bring to a boil then reduce the heat and simmer on low for about 5 minutes.

6. Add the chicken, red pepper and peas.  Continue to stir and then season with curry and pepper to taste.

Serve over or with Yorkshire pudding.

1 cup of flour, sifted

2 eggs

1 cup milk

1 tablespoon water

To prepare:

Preheat oven to 450 F.  Oil a muffin tin and set aside.

Place the sifted flour in a bowl.  Beat the eggs until thick, then add the milk.  Combine the flour and milk and beat until smooth.  Allow to rest for approximately 10-15 minutes.  Add 1 tablespoon of water and whisk again until smooth.

Place the well oiled muffin tin (I used mini muffin tins) into the preheated oven and heat until almost smoking hot.

Remove the tin from the oven and fill the muffin tins 1/2 full with the prepared batter.  The batter should begin to cook as you add it to the tin.

Bake for 10-15 minutes until golden brown.  After about 10 minutes reduce the heat slightly to 375 F and continue to cook.  DO NOT OPEN THE OVEN DOOR to look at the Yorkshire Pudding as it will cause them to deflate and fall.

Serve immediately.

Recipes that have been used for years are always the best because they are tried and true.  I love when people share recipes with me it makes me feel honored like I am one of the privileged.  This is a very tasty meal that will be loved by all.
