Today is a very special day for a lot of people.  We do not usually do very much on special occasions as we try to do something special for each other everyday.  I really just like to make a nice meal and share it with my boyfriend.  I do not buy gifts as I like to make them myself.  I prefer cooking as a gift as I know it will get used 🙂  There are so many ways to say I love you aside from purchasing things for one another.  Don’t get me wrong I do enjoy receiving gifts and giving them I just do not need one day to do so.   This meal would be a great way to say I love you to your special someone.  It is light and healthy which is great cause if you plan on sharing a dessert you probably don’t want to overfill on dinner!  It is easy to prepare and very quick. It is so refreshing with the mint and lemon flavors.  This would be great any night of the week especially if you were in a hurry and wanted something really tasty that wouldn’t leave you feeling bogged down.

Ingredients and Directions for Spicy Lemon Shrimp

1.  Ingredients for the Spicy Lemon Shrimp

1 lb raw shrimp, peeled and deveined

1 tablespoon of salt

1/4 cup olive oil

1-2 teaspoons dried chili flakes

3 cloves of garlic, minced

1/2 teaspoon grated fresh ginger

1 tablespoon fresh lemon juice

1 lemon cut into wedges

To prepare:

Rinse the shrimp under cold water and drain.  Pat dry and then place in a small dish and sprinkle with salt.  Allow the shrimp to sit in the salt for about 5 minutes.  Rinse the shrimp again and pat dry.  Sprinkle the shrimp with lemon juice and marinate for about an hour in a sealed container in the fridge.

2. In a non-stick fry pan over medium high heat add the oil.  When the oil is hot add the garlic, ginger.

3. Add the chili flakes and saute until fragrant.

4. Add the shrimp to the pan and allow to cook until pink on the bottom

5. Turn the shrimp over and cook on the opposite side until it is completely pink.

Ingredients:

2 cups fresh snap peas, rinsed and dried

1 tablespoon of olive oil

1 clove of garlic, minced

salt and pepper to taste

1 tablespoon chopped mint

To prepare:

In a medium fry pan over medium-high heat add the olive oil.  When the oil is hot add the garlic.  Add the peas and saute for about 4 minutes.  Add salt and pepper to taste.  Remove from heat and add the mint.

Healthy and nutritious.  The simpler the dish the tastier it is.
