Lemon Butter Steak with Asparagus

I have to tell you a little secret, I love lemons.  I really could use lemons on everything.  They really liven things up when you use them.  Their aroma is so invigorating and uplifting.  Lemons have so many things going for them.  They are loaded with vitamin C, they are great for digestions as they help the liver produce bile.  Lemons are also very useful with high blood pressure, so if you eat a lot of red meat adding a little lemon to it may help to counteract some of the other problems associated with eating red meat.  I love to use lemons on  and in everything especially steak.  I think you will find that adding a few drops of freshly squeezed lemon juice will add so much flavor to your steaks.  This is an extremely quick and easy meal that is loaded with all sorts of vitamins and minerals, don’t worry it is not skimping on taste 🙂

1.  Ingredients for the Steaks and Lemon butter

2 New York Strip Steaks

2 cloves of garlic, minced

3 tablespoons of fresh lemon juice

salt and pepper to taste

To Prepare:

Place the steaks into a shallow dish and rub the garlic over the steaks and then squeeze some lemon juice over the steaks, sprinkle with salt and pepper and allow to marinate for about an hour or longer if you prefer.

For the Lemon Butter

5 tablespoons of butter

1 tablespoon freshly squeezed lemon juice

2 tablespoons of fresh minced parsley

1 tablespoon finely minced shallot

To prepare:

2. Finely chop the garlic and shallots.

3. Beat the butter in a small dish with a spoon.  You could use a beater but it is not worth the mess using the spoon is just as easy.  Add a few drops of lemon juice to the butter and beat it in until combined.

4. Add the parsley and stir to combine

5. In a medium fry pan over medium heat add a tablespoon of the lemon butter and allow it to foam

6. Add the steak to the hot pan and cook until it is done to your preference turning half way through the cook time.

7. For the asparagus add a tablespoon of the lemon butter to a pan over medium heat and allow the butter to foam and then add the asparagus and saute for a few minutes then cover and allow to cook for about 3-5 minutes do not over cook as they will turn mushy.

For the Potatoes

5-7 small red baby potatoes

3-4 cups water for boiling

To prepare:

In a small or medium pot over medium-high heat water to a boil and add the potatoes.  Boil until the potatoes are cooked through and are soft and tender when pierced with a fork.

To serve place the steak on a warm plate and spoon some of the juice from the pan over the steak, this will keep the steak moist and  juicy.  Add a few sprigs of asparagus to the plate along with some potatoes and dinner is served.

Cooking healthy doesn’t mean you have to sacrifice flavor.  You only need to learn how to bring out the flavor of what you are cooking with spices or marinades.  Lemon always adds so much to a simple dish.  I think it is a combination of the aroma and the flavor, it is a powerful fruit that you should always have handy:)
