Simple and Satisfying Lemon Shortbread Cookies

Shortbread cookies are one of my favorite.  They are simple and easy to make.  There is not a whole lot that goes into shortbread which allows the true taste to really shine through.  The secret to a really good shortbread is a good quality butter.  The texture of a shortbread is hard for me to describe its as though they melt in your mouth.  I love these cookies because they are so versatile, you could add any flavor you like.  I added lemon because I put lemon on and in everything.  Lemon desserts and cookies are always a favorite because they are both sweet and tart.  These cookies are not tart the lemon flavor is rather subtle but still fragrant.  I always thought of shortbread cookies as a Christmas cookie but I have recently come to change my view.  You could have them for breakfast, brunch, afternoon tea or any occasion.  The lemon shortbread cookies are so satisfying you will not be disappointed.

Ingredients for the Lemon Shortbread Cookies

2 1/4 cups flour

1/4 cup cornstarch

1/2 cup sugar

1/4 cup lemon zest

1 cup butter

1 teaspoon lemon extract

1/2 teaspoon vanilla

To Prepare:

Preheat oven to 325 F.  Line two baking sheets with parchment paper.  Place the oven racks in the upper and lower third of the oven.

Combine the dry ingredients together in a medium bowl.

Place the sugar and lemon zest into a food processor and blend until finely ground.

In the bowl of your electric mixer beat the butter until light and fluffy, scrape down the sides of the bowl.  Add the sugar and lemon zest to the butter along with the lemon extract and vanilla and beat until thoroughly combined.  Slowly add the dry ingredients to the butter mixture and beat until just blended, it will be crumbly.

Turn the dough out on to a lightly floured surface and knead the dough for a minute or two until it comes together.  Divide the dough into four equal pieces.  Place two pieces on each baking sheet and form the dough into rounds that are about 1/2 inch thick and 4-6 inches round.  Using a knife divide the 4 disks into 8 wedges, do not cut the dough completely just mark it.

Bake for 10-12 minutes and then rotate the pans between upper and lower racks.  Continue to bake for 13-15 minutes or until light golden brown.  Remove them from the oven and cool on a wire rack.  Cut through the marks on the disks and store in an air tight container.

    OMG, OMG, OMG I LOVE shortbread! These look so tempting — with a spot o’ tea or maybe a cold glass of milk. The last time I ever made anything close to a shortbread, I do believe was a tart with a chocolate filling and shortbread kind of a crust. Way too rich… These wedges of shortbread look more reasonable. And I have two lemons just waiting to be used and some fancy butter sitting in the freezer… not sure about the lemon extract. Maybe use a tsp of lemon juice?

    I made your Simple and Satisfying Lemon Shortbread, yesterday….. but I cheated and I took a ‘short ‘cut!
    Cheated by squishing some fresh lemon juice into the batter to give it more zing….and took a ‘short ‘cut by making the shortbreads like the old – fashion ice-box cookies! I divided the dough into 3 equal parts, made 3 rolls and chilled them. Meantime, your recipe for the Chewy Chocolate Chip cookies were baking. After chilling the Lemon Shortbread dough, I sliced the rolls into cookies about 1/3 ” thickness and baked them. Two very good cookie recipes that you posted!
