I don’t know if it’s just me or what but lately I have been feeling like there just isn’t enough hours in a day.  I find myself constantly moving trying to accomplish all that needs to be done and it leaves little time for the things I would like to do.  This recipe is an old fashioned favorite that will help you save a little time for the things you want to do.  One dish meals are so simple and quick to make.  They really take the stress out of preparing a meal and cleaning afterward.  This is one of my favorite meals.  It covers all the essential food groups and it tastes amazing.  Shepherd’s Pie is an English dish and was traditionally served with lamb or mutton.  It is a layered casserole lined with ground meat, creamed corn and mashed potatoes and then baked.  Everyone will enjoy this meal.

The Procedure:

1. Place the ground pork in a fry pan over medium-high heat.

2. Cook the meat until no longer pink.  Drain all the fat from the cooked meat.

3. 1 stalk of celery, 1 carrot, 1 onion, 1 clove of garlic minced and 2 potatoes.  These vegetables will be added to the ground pork.

4. Chop the above vegetables.

5. In a non-stick fry pan over medium heat sweat the vegetables until tender.

6. Add the tender vegetables to the ground pork and cook for about 5 minutes.

1. Mash the potatoes until smooth and creamy.

2. In a 9×9 baking dish add the cooked meat and vegetables to the bottom of the dish and smooth the top surface.  Add two 10 oz. cans of cream corn on top of the meat and smooth the top again.

3. Place the mashed potatoes on top of the cream corn and smooth the potatoes and then sprinkle with paprika.

4. Bake at 350 F for 45-60 minutes or until golden brown on top and the corn starts to bubble around the edges of the potatoes.

You really will not be able to find a dish that is so simple yet satisfying.  It is comfort food at it’s best.  One dish meals or casseroles are perfect for those days when you are too busy to cook.  You could easily prepare this in advance and freeze it and then bake straight from the freezer, the time will have to be increased slightly but all the work is done.
