I have been meaning to add more salads and I thought this was a good starting point.  I really love to make salads.  I don’t know why, I just do.  My favorite part about making salads is that you can put anything in them there are no restrictions.  This is a really simple salad to prepare.  It is really light and tasty.  The mango really adds a lot of flavor and a great color to it.  The shrimp may be served hot or cold the choice is up to you.  If you are looking for a quick, light and healthy dinner or lunch you should think about having this salad it is really easy to prepare and very healthy.

1.  Ingredients for the Salad

4 cups of chopped Romain lettuce

1/2 small red onion

1/4 red pepper, sliced

1 ripe mango, cut into cubes

1/2 cup chopped walnuts

1/3 cup fresh lemon juice

1 tablespoon fresh lime juice

2 tablespoons light brown sugar

1/4 cup olive oil

1/2 teaspoon cayenne pepper

3 cloves of garlic, thinly sliced

1/2 inch piece of fresh ginger, finely chopped

1 lb shrimp, peeled and deveined

1/2 teaspoon coriander seeds

To Prepare:

2. In a small bowl whisk together the lemon juice, lime juice, brown sugar, 2 tablespoons of olive oil and cayenne pepper.

3. Add the remaining olive oil to a non-stick fry pan over medium-high heat. When the oil is hot add the garlic and ginger and saute a few minutes until fragrant.

4. Add the shrimp, coriander seeds and season with salt and pepper.  Cook the shrimp until they are cooked through.

To serve toss the lettuce, onion, mango, red pepper and some walnuts together in a bowl.  Drizzle some of the prepared dressing over the salad and toss to coat the lettuce and other ingredients.  Divide the salad mixture onto plates and divide the shrimp amongst the plates evenly.

This is an amazing salad loaded with flavor.  It is quick and simple to make.  If you are looking for ways to lighten your diet and keep the taste try incorporating more salads into your day.  Adding a little fruit to your salad will sweeten it up a little and give it a different texture.

    It looks fresh and tasty; I love mango in salads and the combination with shrimps is sooo tasty!
