Sesame Chicken with Brown Rice and Broccoli

First of all, please allow me to apologize for yesterdays lack of a post, I am sorry.  I have been trying to revamp things and it is easier said than done.  So, in hopes of making it up to you I have two posts for today 🙂  If there are any future issues, I will do my best to work them out before making major changes here.  I had intended on posting this yesterday but things went wonkey and I was unable to do anything. Thanks for bearing with me!

There comes a time in everyone’s life when change is inevitable.  There is no sense in trying to avoid it because it is time.  I find that when you change the food you eat it helps to speed up the process of change and it really makes a lot easier to make more major transitions in your life.  It is as if the food you eat assists you in making the changes you are required to make.  If you have ever felt tired or withdrawn, have you ever considered looking at your diet as a cause?  If you have a tendency to consume (or over consume) sugar, flour or processed foods on a regular basis this could be the root cause to your feeling fatigued and therefore attributing to your lack of motivation, almost guaranteed.

Over the past week I decided to take a more conscious approach to what I was eating by eliminating sugar, flour and all processed foods.  It has been the greatest experience because I now feel refreshed, clean, light and above all else I have (or feel I have) and heightened mental clarity.  So, if you have been feeling bogged down take a look at the food you are eating and see if you could make some subtle changes to your diet to see if it will alleviate your fatigue.  It is quite simple to do, start by simply adding more fruits and vegetables to your diet first then try to incorporate beans and legumes.  Try cutting down on dairy products and meat, I am not saying cut them out completely just make the veggies the star on your plate rather than the meat.  By making the choice to change your diet you will have an easier time deciding to make more major changes in your life with a great ease in the transition.  This dish is a great starting point if you are looking to change what you are eating without sacrificing  taste.  This is a very simple dish that is pretty popular at Chinese restaurants.  Now you can make it yourself at home!  This is a light and healthy meal that will leave you feeling light and clear.  You could have it for lunch or dinner, the honey in the sauce adds a little sweetness that shouldn’t be passed but could be if one was sweet enough to begin with.

Ingredients and Directions for Sesame Chicken

1.  Ingredients

1 cup brown rice

3 tablespoons honey

2 tablespoons sesame seeds

2 tablespoons soy sauce

2 cloves of garlic, minced

2 egg whites

1/8 cup cornstarch

1 lb chicken cut into 1 inch pieces

Salt and Pepper

2 tablespoons olive oil

4 green onions, sliced

1 1/2 lb broccoli florets

To Prepare the Chicken:

2. In a medium bowl whisk together the egg whites and the cornstarch season with salt and pepper.

3. Add the chicken pieces to the egg white mixture and toss to coat the chicken.

4. In a small bowl add the honey, sesame seeds, soy sauce and garlic and whisk until combined.

5. In a non-stick fry pan over medium-high heat add the olive oil.  When the oil is hot add the chicken and cook for about 10 minutes until the chicken is golden brown turn the chicken occasionally.

6. Once the chicken is cooked add the honey mixture to the chicken and stir to coat the chicken.  Simmer the chicken in the sauce until thickened about 3-5 minutes.

For the Broccoli simply steam until tender but crisp about 5 minutes.

Cook the brown rice according to the package instructions.

To serve, spoon some brown rice onto the plate; make a well in the rice and then add the sesame chicken; sprinkle with green onions and sesame seeds and place the broccoli on the side.

This meal is amazing!  It is light and delicious.  It doesn’t take long to put together either about 20 minutes (the rice does take a little longer).  If you wanted to add sauce to the rice simply double the ingredients.
