This is another great example of how healthy delicious food can be quick and simple.  I love flavor.  I love spice.  I love to experiment with spices to make flavors. Indian food is great for learning about flavors and how to cook with them.

If you have not noticed by now I eat a lot of chicken.  It is a neutral food in our home.  It is our Switzerland of meat.  There are occasions when ground chicken is hard to come by in the grocery stores.  If you are able to find it, buy it and have a few on hand in the freezer just in case.

Ground chicken cooks quickly so it is great for those nights where you may be pressed for time or you just don’t feel like hanging over the stove for an hour.  The cumin baby potatoes go perfectly with the ground chicken.  They are crispy and very tasty.  The cumin adds that certain je ne sais quoi.  If you enjoy a tender spicy potato you should definitely give these a try tonight.

Ingredients For the Chicken

2 tablespoons olive oil

1/2 in stick of cinnamon

3 cardamon pods

2 whole cloves

2 bay leaves

1 small onion, chopped

4 cloves of garlic, minced

2 teaspoons peeled, finely grated fresh ginger

1 lb of ground chicken

1/2 cup frozen peas

1/4 teaspoon turmeric

1 teaspoon garam masala

1/4 teaspoon cayenne pepper

juice of 1/2 a lemon

7-8 small red potatoes, parboiled*

1/2 teaspoon salt

2 tablespoons olive oil

1 teaspoon cumin seeds

1 teaspoon ground cumin

1/4 teaspoon garam masala

1/4 teaspoon cayenne pepper

*(To parboil the potatoes, place them in a pot and cover them with about 2 inches of water and a teaspoon of salt.  Cover and boil for about 10 minutes or until the potatoes are slightly tender)

1. In a non-stick fry pan add the olive oil and heat over medium-high heat.  Once the oil is hot add the cinnamon stick, cardamon pods, whole cloves and bay leaves and stir for a minute or so.

2. Add the onion and cook until brown around the edges.  Place the garlic and ginger into the fry pan and cook for about a minute.

3. For the potatoes place a separate fry pan over medium-high heat add the oil when the oil is hot add the cumin seeds and let them sizzle for a few seconds then add the potatoes.

4. Add the ground chicken to the alternate fry pan with the onion and garlic mixture.  Cook until no longer pink breaking down the lumps as you cook.

5. Add the parboiled potatoes to the fry pan with the cumin seeds in it and brown the potatoes on all sides.  Reduce the heat to medium and then add the ground cumin, garam masala and cayenne pepper.  Season with salt and pepper to taste.  Cook the potatoes for about 5 minutes tossing to coat with the spices.

6. Add the peas, turmeric, garam masala, cayenne pepper and lemon juice to the ground chicken and stir to combine.  Cook for another 5 minutes or so and season with salt and pepper to taste.

This dish is one healthy and tasty meal.  It prepares in under 30 minutes and it is full of amazing flavor, what more could you ask for?

    This sounds great, although I’ll have to substitute ground turkey or grind my own chicken. I may try the potatoes first, they seem really versatile. Great pix.
