This is one of the most refreshing salads I have ever had.  It has so much flavor and texture in every bite.  Who knew healthy eating could be so much fun?  Not only fun but tantalizing for the taste buds as well.

This salad is perfect on a hot summer afternoon or if you are in the dead of winter dreaming about a hot summer afternoon.  It is so light.  The dressing is home made so you know exactly what you are eating because it is all from scratch.  So simple!

If you have spent the winter in hibernation or semi-hibernation, let me remind you that there is a certain season just around the corner that requires you to be active.  It is the season of layer-less coverings and bare minimums.  Yes, that’s right, summer.  With spring almost here and summer just around the corner, it is time to pull yourself out of hibernation and start thinking about what you are eating because there will soon be no layers to cover up all the months you have spent eating butter, sugar and flour. (You are not alone, in your endeavors)  I know it is a sad time but we all have to do it.  The comfort foods must be put away and we have to start thinking light and healthy. Light and healthy does not have to equate to dull or flavorless.

Try this salad, you’ll see.  You’ll love it.  I love it.  The flavors are so simple they will leave you feeling simply nourished.

Ingredients

1 cup brown rice, cooked

1/2 cup cucumber, diced

1/2 cup carrot, grated

1 cup broccoli florets

1 tablespoon sesame seeds

1/2 cup red pepper, diced

1 tablespoon parsley, chopped

1/4 cup Basic Oil and Lemon Dressing*

*For the Basic Oil and Lemon Dressing

2/3 cup olive oil

juice from 1/2 a fresh lemon

1 clove of garlic, finely minced

pinch of pepper

For the dressing: mix all the ingredients together in a jar and shake vigorously for about a minutes.  Let stand for an hour or longer if possible to allow the flavors to blend together.

For the salad: In a medium bowl, combine the cucumber, carrot, broccoli, sesame seeds, red pepper, parsley and dressing.  Toss to combine.

Portion the rice on plates and spoon the vegetables over the rice.

This salad is easily put together in less than 10 minutes, if you have the dressing and rice already cooked.  It is a great idea to always have a little dressing already made up and stored in the fridge just in case.  It is a one bowl dish which is perfect for no fuss nights.  It is a quick and simple salad that is loaded with all sorts of vitamins and minerals that your body will be thoroughly thankful for.
