A Falafel is a ball or patty made of chickpeas or fava beans.  Most often you will see falafels in a pita or wrapped in a flat bread known as lafa.  Falafels can be topped on salads, dipped in dips, eaten as a snack or served as appetizers.  They are very healthy and when made with chickpeas are very high in protein and fiber.  Chickpeas are also low in fat and have no cholesterol.  They are great if you are trying to lose weight because they will fill you up and do not add a lot of empty calories.

If you have never tired falafels you should.  You should do it today.  They are simple and nutritious.  You should do it for your body because your body takes such good care of you, you should take good care of it.  Falafels will help you do that!

1.  Ingredients

For the Falafel

1 – 19 oz can of chickpeas, drained

3 cloves of garlic, minced

1 egg

3 tablespoons of sesame oil

1/2 teaspoon ground cumin

1/2 teaspoon turmeric

1 tablespoon of parsley

2 tablespoons green onions, sliced

For the Tomato Rice Salad

1 cup cooked and cooled brown rice

1 cup diced tomatoes

1/4 cup sunflower seeds

2 tablespoons green onions, sliced

1 tablespoon olive oil

3 tablespoon fresh lemon juice

1/2 teaspoon dried mint

salt and pepper to taste

2. To prepare the salad combine all the ingredients into a bowl and lightly toss to combine.  Adjust the seasoning to your taste.

3. To prepare the falafel preheat oven to 375 F.  In a food processor add the chick peas, garlic, egg, sesame oil, cumin and turmeric and puree until smooth.  Occasionally scrape down the sides.  Remove the mixture from the food processor and place in a bowl.

4. Add the parsley and green onions to the chick peas and stir to combine.

5. Roll the mixture into 1-2 inch balls in the palm of your hand.

6. Place on a baking sheet lined with parchment paper and bake for 10-15 minutes.

This dish is so simple and delicious.  It is very healthy and quick to put together.  It just doesn’t get any better than this!

    I have only eaten deep-fried falafel and it didn’t go well with my stomach. :/
    I definitely need to try your recipe and bake them! yum! Thanks!
