Pork Marsala with Asparagus

Fine dining does not have to be restricted to restaurants or professionals.  Anyone can do it.  It does not take an over abundance of knowledge or time.  It only requires a few ingredients that if you do not always have on hand you should.  Wines and fortified wines are an example of an ingredient you should always have on hand if you plan on making a lot of fancy sauces for your meals.

Marsala is a wine produce in the region surrounding the Italian city of Marsala in Sicily.  It is similar to port as it is a fortified wine.  It is frequently used in Italian cooking.

This is a very simple sauce to make.  It creates a meal that is prepared in about 20-25 minutes with all the prep and it tastes absolutely amazing.  The Marsala sauce is definitely a unique flavor that can not be substituted.  This is a very versatile sauce that can be used on any meat you choose, chicken is very popular.  What ever meat you choose you will love this fine dining sauce in the comfort of your own home!

Ingredients and Directions for Pork Marsala with Asparagus

1.  Ingredients

4 pork loin chops, cut into 1-2 inch slices, fat removed

salt and pepper to taste

1/2 cup flour

2 tablespoons of olive oil

1/2 cup of Marsala wine

1 cup of chicken stock

2 tablespoons of butter, cut into pieces

1 tablespoon of chopped fresh parsley

To prepare:

Rinse and dry the meat, season it with salt and pepper.  Place the seasoned pork in the flour and dredge.  Shake off the excess flour.  Do this immediately before cooking.  Place the oil in a non-stick fry pan over medium-high heat.  When the oil is hot add the pork to the pan, in a single layer.  Saute the meat until lightly browned on both sides. Remove the meat from the pan and set aside.

3. Drain any excess oil from the pan and then add the Marsala wine to the pan and deglaze.  Add the chicken stock and reduce the liquid over high heat until about half. Add the pieces of butter and swirl the pan until they are melted and blended into the sauce.

4. Add the pork to the pan and bring just to a simmer.  Turn the meat to coat it with the sauce.

For the asparagus, simply steam for about 3-5 minutes.

Serve immediately, sprinkle with parsley.

The simplicity of this meal is what makes it so appealing.  It is so delicious Marsala wine adds a very distinct flavor, you have to try it!
