Chili Con Carne is one of my favorite one pot meals to make.  The longer it sits the better it tastes.  Every time I make it I feel like I am back in the Wild West and the roads are dirt and there are horses instead of cars.  I pretend that I am dressed like a Can-can dancer making my famous chili for the town’s chili cook off.   At the chili cook off there are tables of pies for the pie eating contests.  The dunk booth where you throw baseballs at the target to dunk the person sitting on the chair in side the water tank.  There are kissing booths where you pay a nickle to get a kiss.

This is my version of chili con carne.  It is very basic and quite simple, like most chili recipes.  You can adjust the amount of spices to your liking.  I like to have chili with fresh biscuits with cheese and dill which are also a breeze to make.

1.  Ingredients for Chili

1/2 lb lean ground beef

1- 28 oz can diced tomatoes

1-14 oz can red kidney beans rinsed and drained

2 tablespoons of tomato paste

1/2 red pepper, diced

1/2 green pepper, diced

1 small onion, chopped

2 cloves of garlic, minced

2 tablespoons of chili powder (I always start with two and work my way up, adding to taste)

1 teaspoon each dried basil and oregano

1/2 teaspoon dried thyme

2 bay leaves

1 teaspoon dried red pepper flakes

salt and pepper to taste

To Prepare:

2. In a large pot over medium-high heat add two tablespoons of olive oil.  Add the onion and garlic and saute until fragrant, about 3 minutes.

3. Add the red and green pepper and saute for 2 minutes.

4. In a non-stick fry pan over medium heat cook the beef until no longer pink.

5. Once the beef is cooked, drain any fat that is in the pan.

6. Add the beef to the onions and peppers in the large pot along with all the other remaining ingredients.  Stir to combine.  Bring to a slight boil over medium-high heat and then reduce the heat to low and simmer for 1 hour or more.  The longer you simmer the chili the more flavorful it will be.  If you have a slow cooker you could use the slow cooker and simmer on low all day, stirring occasionally throughout the day.

1.  Ingredients

2 1/2 cups flour

1/2 cup shredded cheddar cheese

1 tablespoon dry dill  (if you are using fresh use 2 tablespoons)

2 1/2 teaspoons baking powder

1/2 cup cold butter, cut into cubes

3/4 cup milk

1 egg, lightly beaten

Egg wash:

1 egg + 1 teaspoon milk, whisked together

To Prepare the Cheese and Dill Biscuits:

Preheat oven to 400 F.  Line two baking sheets with parchment paper and set aside.

2. In a medium size bowl combine the flour, baking powder, cheese and dill, stir to thoroughly combine. Add the cold butter to the flour mixture and using a pastry cutter, two knives or a fork,  cut in the butter until it resembles coarse crumbs.

3. In a glass measuring cup add the milk and egg and whisk together.  Add the milk and egg to the flour mixture and stir just until moistened.

4. Turn the dough out on to a lightly floured surface.

5. Knead the dough until you are able to form a smooth dough.

6. Roll the dough out to about 1/2 inch thick.

7. Using a round cutter or a glass, cut out the biscuits.

8. Place the cut out biscuits on a baking sheet lined with parchment paper.

9. Brush the tops of the biscuits with the egg wash. Bake the biscuits for 10-15 minutes or until the tops are golden brown and a toothpick inserted comes out clean.

10. Remove the biscuits from the oven and cool slightly on a wire rack.
