Homemade Granola & Mango-Berry Parfait

Parfaits are a wonderful thing.  They are very easy to make and may vary according to the chosen ingredients.  This is a very simple and healthy homemade granola mango-berry parfait.  I used low fat plain Greek style yogurt and a homemade granola mix.  It is amazing how quick this dessert or snack is.  I really love the simplicity of it and the adaptability of it.

A parfait is French word literally meaning “perfect” which couldn’t be more fitting.  Commonly, a layered frozen dessert there are many variations, this is mine.

Ingredients and Directions for Homemade Granola & Mango-Berry Parfaits

1.  Ingredients for the Homemade Granola

2 tablespoons of olive oil

1 1/2 cup of regular rolled oats

3 tablespoons of flax seeds

1 teaspoon cinnamon

1/8 cup water

1/8 cup apple juice

2 tablespoons of maple syrup

4 tablespoons of honey

1 tablespoon brown sugar

To Prepare the Homemade Granola:

Preheat the oven to 320 F.  Line a baking sheet with parchment paper and set aside.

2. In a mixing bowl combine the oats, flax seeds and cinnamon and stir.

3. In a separate bowl mix together the water, apple juice, maple syrup, honey and brown sugar.  Add the wet ingredients to the oats mixture and stir until it is evenly moistened.

4. Turn the oat mixture out onto a baking sheet lined with parchment paper and evenly spread it out.  Bake for 15 minutes.  Remove from the oven and stirring break down any large clumps.  Bake for an additional 10 minutes or until crisp and golden brown.  Remove from the oven and allow to cool completely.  Store in an air tight container.

5.  Ingredients for the Mango-Berry Parfait

3/4 cup homemade granola

3/4 cup plain Greek style yogurt (low fat)

6 tablespoons honey

1-1 inch piece of grated fresh ginger

zest of one lime, plus one teaspoon of juice (optional)

1 mango, peeled, sliced and cubed

1/2 cup mixed berries (blueberries, raspberries, blackberries)

To Assemble the Parfaits:

6. In a small bowl add the yogurt, honey and ginger stir until thoroughly combined.

7. In a tall glass place a 3 tablespoons of mixed berries, then add 3 tablespoons of mango.

8. Add a layer of the yogurt mixture, about 1/4 cup.

9. Add 1/4 cup of the granola smoothing the top.

10. Repeat the berry and mango layer.

11. Top the mango layer with yogurt then add a tablespoon of granola to top the parfait.  Cover with plastic wrap and refrigerate for 2 hours before serving to allow the flavors to meld.  Serve with a fresh berry on the side for garnish.

This is a great alternative to rich desserts.  It is healthy, loaded with fiber and all sorts of other goodness.
