Homemade Strawberry & Blueberry Sherbet

Making homemade ice cream, sorbets and sherbets are so easy to do.  They take no time at all and they taste so different from the store bought versions.  The best part of making berry sherbets is that you do not require fresh berries to enhance the flavor.  Frozen berries work wonderfully.  Once you make your own sherbets and ice creams you will never want to purchase the store bought products again.

Sherbets are very similar to ice cream in texture.  The method to make the sherbet is a lot less time consuming though not to mention it is easier.  You could use this basic recipe for any berry flavor you like and adjust the sugar to your taste.

Ingredients for Strawberry Sherbet

2 cups sliced strawberries

1/8 cup light corn syrup

1/8 cup sugar

1/2 tablespoon fresh lime juice

1/8 cup plain Greek yogurt

1/4 cup + 3 tablespoons whipping cream

To Prepare:

Preheat oven to 325 F.  Line a baking sheet with parchment paper and set aside.

Toss the strawberries with the light corn syrup.  Place the strawberries on the prepared baking sheet and bake in the preheated oven and bake for 45-55 minutes or until the syrup is thick and the strawberries are a deeper red.

Remove the strawberries from the oven and allow to cool, place in a food processor.  Add the sugar and lime juice and process until smooth.  Scrape into a medium bowl and then stir in the yogurt and whipping cream.  Cover and place in the refrigerator and chill for several hours or overnight.

Once chilled, transfer to the bowl of your ice cream maker and process according to the manufactures instructions.  Once made place the sherbet into a chilled container and place in the freezer for a few hours to harden more before serving.

Substitute blueberries for the strawberries
