Jalapeno Jack Scones

Scones are quite similar to a biscuit. They are easy to make and there are many different flavors you can create.  There are sweet scones and savory.  These Jalapeno Jack Scones are a savory scone.  They are so delicious and the cornmeal added to them adds a slight gritty texture that really accentuates the other flavors in the scone.  The trick to having a light scone is to not over work the dough, less is more.

1.  Ingredients

1 cup flour

1 tablespoon cornmeal

1/2 tablespoon baking powder

4 tablespoons butter, cold, cut into small cubes

2 large eggs

1/4 cup heavy cream  (plus more for brushing the tops of the scones)

1/4 pound pepper jack cheese, shredded

1-2 medium jalapenos, some seeds removed, diced small

1 teaspoons olive oil

1/2 tablespoon flour

To prepare the Scones:

Place a rack in the center of the oven and preheat to 400 degrees F.

2. In a large bowl, whisk together the flour, cornmeal, baking powder.

3. Add the butter to the flour mixture.

4. Work in the cold butter with your fingers until the mixture resembles coarse meal.  Some butter pieces will be the size of peas and the flour will be nice and crumbly.

5. Heat the olive oil in a small saute pan and cook diced jalapenos  until softened, about 4 minutes.

6. Let the diced peppers cool and them mix with the cheese.  Toss the mixture in the remaining tablespoon of flour and set aside.

7. In a small bowl whisk together the 2 eggs and heavy cream.

8. Add the jalapeno and cheese mixture to the dry ingredients and toss to evenly incorporate.

9. Add the wet ingredients to the dry ingredients all at once.

10. Stir until fully incorporated and the mixture comes together be cautious not to over mix.

11. Turn the dough out onto a lightly floured surface and knead for about 30 seconds.  Form into a disk  about 6 inches around and 2 inches thick.

12. Cut disk into six wedges and place on a parchment paper lined baking sheet.  Brush with heavy cream.  Bake for 20 minutes or until golden brown and delicious.  These are best served the day they’re made.

The Monteray jack cheese and jalapeno peppers are a great combination of flavors. The spicy flavor may be adjusted using less pepper seeds.
