Broccoli and Mushroom Quiche

There is nothing simpler than quiche.  They are so easy.  They are quick and they taste delicious.  The great thing about quiche is that you can easily change the ingredients to whatever you want.  Spinach and mushroom is one alternative, cheese and bacon for quiche Loraine, ham and cheese are just a few off the top of my head.  You could also add slices of sausage to this one and it would be really delicious.  Quiches are great for breakfast, brunch, lunch or dinner.  You could also prepare mini quiche and freeze them for other occasions, I like to do this for Christmas, they make great little appetizers.  If you are looking for a quick and delicious meal this is definitely the way to go!

Ingredients and Directions for Broccoli and Mushroom Quiche

1.  Ingredients

2 tablespoons of olive oil

1 cup broccoli florets

1 cup sliced mushrooms

1/2 cup diced red pepper

1/2 cup sliced green onions

3 large eggs

2 cloves of garlic, minced

1 cup whole milk

1/2 cup crumbled feta

1/2 cup shredded cheddar cheese

3 tablespoons of chopped walnuts

salt and pepper to taste

1 prepared and baked pie crust (I recommend this one)

To  prepare the Quiche

Preheat oven to 375 degrees F.  Bake a 9-inch pie crust according to directions and set aside.

2. Combine the eggs and milk in a small bowl.

3. Whisk the eggs and milk until thoroughly combined.

4. Heat the oil in a large skillet over medium heat.

5. Add the mushrooms and cook, stirring until tender, about 5 minutes.

6. Add the garlic and cook for 1 minutes more.

7. Add the broccoli, red pepper, green onion and cook, stirring, until any remaining moisture has evaporated and the broccoli is slightly tender, about 4 minutes.  Remove from heat.

8. Allow the pie crust to cool before filling.

9. Spoon the broccoli mixture evenly into the pie shell.

10. Sprinkle with the cheese and nuts.

11. Pour in the egg mixture.

Bake the quiche until puffed and golden brown, about 35 minutes.

This is one of the most delicious meals I have had in a while.  It is so simple and quick to make. I highly suggest making this for brunch this weekend!
