These muffins are so moist and tender.  They are the same as regular banana muffins except they have brown sugar and white chocolate in them.  If you do not have white chocolate you could use regular chocolate chips.  We do use regular chocolate chips at work and they are just as tasty.  I have been on  a white chocolate kick lately.  I quite like white chocolate it has such a different taste than regular chocolate.  I have been using white chocolate in cookies and also there is a cake that I will share with you very soon that is absloutely to die for, I promise I’ll share that with you very soon.  It is a white chocolate mousse cake with strawberries, oh I can not wait to show you 🙂  These muffins are great too, they are quick and easy to make. Ingredients and Directions for Mini Banana Muffins with White Chocolate Chips

1.  Ingredients

1 3/4 cups flour

1/2 cup sugar

1/4 cup brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 cup white chocolate chips

3 large ripe bananas, mashed

1/2 cup butter, melted and cooled

3 eggs, lightly beaten

1 teaspoon vanilla

To Prepare the Muffins

Preheat oven to 350 F,  place the oven rack in the middle of the oven.  Butter or spray 2 mini muffin trays (1 regular size muffin tray) with a non stick vegetable spray.

2. In a large bowl combine the flour, sugars, baking powder, baking soda, and white chocolate chips.

3. In a medium-sized bowl combine the mashed bananas, melted butter, eggs and vanilla.

4. With a spatula, fold the banana mixture into the flour mixture until just combined.

5. The important thing is not to over mix the batter. Over mixing the batter will make the muffins tough and rubbery.

6. Spoon the batter into the prepared muffin tins.

Bake about 12-15 minutes for mini muffins (18-20 minutes for regular muffins) or until a toothpick inserted in the center comes out clean. Place on a wire rack to cool for five minutes and then remove muffins from pan.

Makes 24 mini muffins or 12 regular muffins

    Banana muffins are one of my faves, but adding white chocolate chips makes them a million times better!! I love white chocolate and I love that you made them mini!

    I have a few bananas in the freezer. Perhaps it is time to thaw them out.
