Light Broccoli Sesame Noodles

This is yet again another amazingly delicious and healthy meal.  It is a vegetarian dish that is quite filling and tasty.  You could add a variety of different vegetables to suit your taste.  It is a very simple and quick meal to put together.  I particularly enjoyed the sauce as it has a little peanut butter added to it but it is not at all overpowering it is very subtle.  If you wanted to make it an even healthier meal simply add more vegetables and serve it with brown rice rather than noodles and use light peanut butter.

Ingredients and Directions for Light Broccoli Sesame Noodles

1.  Ingredients

1 bunch broccoli, cut into florets, stalks peeled and thinly sliced

2 carrots, peeled and thinly sliced

1 jalapeno, sliced into rings, seeds removed

1 large onion, thinly sliced

1/4 cup creamy peanut butter

2 tablespoons brown sugar

2 tablespoons rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

2 garlic cloves, minced

1 tablespoon ginger, minced

1 teaspoon red-pepper flakes

1 tablespoon of sesame seeds

To Prepare

2.  In a small bowl combine the peanut butter, brown sugar, rice vinegar, soy sauce, sesame oil, garlic, ginger and red-pepper flakes; stir until fully incorporated.

3.  In a non-stick fry pan over medium-high heat add 1 tablespoon of oil and add the vegetables when the oil is hot.

4.  Add the peanut butter mixture to the vegetables and saute until the vegetables are tender but crispy.

Serve with noodles or rice.

This is a very quick and simple meal to put together, it can be prepared in 20 minutes.

    Your food is almost too pretty to eat! Although, if it were in front of me, I don’t think I’d struggle one bit.
