Thai Chicken Noodle Salad

This is not your run of the mill salad.  It is a one-bowl Asian salad.  It is spicy, sweet, sour and salty all at once.  If you love Thai food you will most definitely love this salad.  The texture of the salad is great as it is not at all soft but rather crunchy from the crisp vegetables and the extra peanuts, if you so choose.  It is a very flavorful and refreshing salad that would be great in the summer months.  You could also use different meats or seafood instead of chicken.  It is a very simple and quick meal that is sure to satisfy.

Ingredients and Directions for Thai Chicken Noodle Salad

1.  Ingredients

For the Spicy Asian Dressing

4 thinly sliced green onions

2 minced garlic cloves

1/2 cup soy sauce

1/2 cup rice vinegar

2 tablespoons brown sugar

1 tablespoon fresh lime juice

1/2 teaspoon red-pepper flakes

To Prepare the Dressing

2.  Combine all the ingredients in a small bowl and mix well.

For the Thai Chicken Noodle Salad

2 chicken legs

Coarse salt

3 1/2 ounces Chinese rice noodles, broken in half if long

1 tablespoon vegetable oil

1 carrot, sliced into ribbons with a vegetable peeler

1 English cucumber, halved lengthwise and thinly sliced crosswise

1/4 cup fresh basil, torn

Options for garnish:  Chopped peanuts, red-pepper flakes, and sliced green onions

To Prepare the Salad

3.  Place chicken legs and half of dressing in a resealable plastic bag (reserve remaining dressing).   Marinate at room temperature for 30 minutes.

4.  In a non-stick fry pan over medium-high heat cook the chicken legs until cooked through.  When the chicken legs are thoroughly cooked remove them from the heat and remove the meat from the bones and set aside.

In a large pot of boiling salted water, cook noodles until tender. Drain, and rinse under cold water to stop the cooking. Transfer to serving plates.

5.  Top with carrots, cucumber, and basil.

6.  Drizzle with reserved dressing, and sprinkle with peanuts and any other garnishes, if desired.
