Old Fashioned Brown Bread

I’m certain that just about everyone has heard of ‘brown bread’.  I am also equally as certain that not everyone knows what ‘brown bread’ is.  Brown bread is an East coast tradition in Canada.  It is most often served with homemade baked beans.  It is a very moist and filling bread.  It is brown in color but is not to be confused with whole wheat bread.  The brown color is from the use of molasses and brown sugar.  Traditional brown bread is made with oats.  This bread in short is delicious.  It is a simple bread to make and does go quite well with beans or homemade soup.

If you have not had brown bread, you have to try it.  You will most certainly add it to your recipes of great breads.

Ingredients and Directions for Old Fashioned Brown Bread

1.  Ingredients 

1 cup rolled oats

2 cups boiling water

2 tablespoons shortening

2 teaspoons salt

1 tablespoon dry active yeast

1/2 cup warm water

1/2 teaspoon sugar

1/2 cup molasses

1/4 cup firmly packed brown sugar

4-5 cups flour

To Prepare the Brown Bread

In a glass measuring cup add the rolled oats, shortening, salt and boiling water.  Stir the mixture and allow to stand until lukewarm.

2.  In a medium size bowl combine the yeast and 1/2 teaspoon sugar.

3.  Add the 1/2 cup warm water to the yeast and sugar.  Allow to sit for 10 minutes or until foamy.

4.  Add yeast to lukewarm oat mixture, add the 1/2 cup molasses and 1/4 cup brown sugar.   Gradually add flour until the dough becomes soft.

5.  Turn the dough out onto a lightly floured surface and knead by hand for 5-10 minutes.

6.  When the dough is smooth and elastic place it in a greased bowl and allow to rise for 1 hour or til doubled in size.

Once the dough has risen, divide the dough in half to form 2 loaves.  Shape the loaves and place  them in greased pans. Allow them to rise

for another 1 hour or until doubled in size.   Bake at 350 F for 30-40 minutes or until a thermometer inserted reads 210 F and the loaves

sound hollow when tapped.

Immediately remove from pans, spread butter over top so it won’t be brittle and let cool.

Makes 2 – 9x5x3  inch loaves

I made my brown bread in mini loaf pans.  I rather enjoy the mini loaves as they make for a great snack with cheese and cold cuts.
