Blondies are a butterscotch brownie or blond brownie.  They are a dense chewy bar cookie that have a butterscotch flavor.  It is the method in which blondies are made that connects them to the brownies as blondies do not contain dark chocolate.  They are a delicious and very easy to prepare.  There are many variations that you could do instead of white chocolate and toasted pecans.  You could make chocolate-toffee squares, cranberry white chocolate squares or pineapple cashew squares.

If you enjoy brownies and butterscotch, you have to try these, they are the best of both worlds.

Ingredients and Directions for Blondies

1.  Ingredients

3/4 cup pecan halves, toasted and chopped

1/2 cup butter

1 cup flour

1/4 teaspoon baking soda

1 large egg

3/4 cup packed light brown sugar

1 teaspoon vanilla

1/2 cup of white chocolate chips

To prepare the blondies

Preheat oven to 350 F and place the rack in the center of the oven.  Butter an 8 x 8 inch square baking pan.

2.  In a small saucepan, melt the butter. Remove from heat and let cool to room temperature.

3.  In a bowl, whisk together the flour, and baking soda.

4.  In the bowl of your electric mixer, beat the egg and brown sugar until light and fluffy.

5.  Beat in the vanilla.

6.  Add the melted butter.  Scrape down the sides of the bowl.

7.  Add the chopped toasted pecans and white chocolate chips to the flour mixture and stir to combine.

8.  On low speed, add the flour mixture and stir until incorporated.

9.  Pour the batter into the prepared pan, smooth the top, and bake for about 20 – 25 minutes, or until the top of the brownies are dry, golden brown, and a toothpick inserted in the center comes out with a few moist crumbs. Remove from oven and place on a wire rack. Cool completely before cutting into squares.


Chocolate-Toffee Squares:  Add 1/2 cup each chocolate chips, skor toffee bits and nuts

Cranberry White Chocolate Squares:  Replace the pecans with walnuts and add 1 cup c0arsely chopped frozen or fresh cranberries and white chocolate chips.

Pineapple Cashew Squares:  Replace the pecans with toasted cashews.  Add 1 cup candied pineapple to the dough

Makes 16 blondies



 These are guaranteed  to satisfy your sweet tooth.  They are a great bar for many occasions.  They are perfect for lunches, snacks, desserts, picnics and hiking.
