Three Cheese Macaroni

Macaroni and cheese is a classic.  For a lot of years I used to eat Kraft macaroni and cheese.  I have not made boxed mac n’ cheese in years.  I really consumed way to much when I was in college buying it by the case.  I still love macaroni and cheese  but it must be homemade.  The great thing about macaroni and cheese is that you can do so much with it.  You could add ham, tomatoes, tuna, yes, I did just say tuna, peppers, broccoli or anything that you like.  Cheese makes everything taste great.  Making macaroni and cheese is very simple and takes about 40 minutes tops, so when your craving sets in it won’t be long until its satisfied 🙂

Macaroni and Three Cheeses

Three Cheese Macaroni

1.  Ingredients

4 tablespoons butter, plus more for buttering the dishes

3 slices good white bread, finely crumbled in a food processor

1/2 medium onion, diced

2 3/4 cups milk

1/4 cup flour

2 teaspoons salt

1/4 teaspoon freshly ground black pepper

2 1/4 cups grated cheddar cheese

1 cup grated mozzarella cheese

1/2 cup shredded Parmesan cheese

1/2 pound elbow macaroni, cooked al dante

To Prepare the Three Cheese Macaroni

Preheat oven to 375 F. Butter 4 individual casserole dishes; set aside. Place the bread in a medium bowl.

2.  In a small saucepan over medium heat, melt 2 tablespoons butter. Add the diced onion and cook for 2 minutes or until soft.

3.  Add the flour to the butter and onion mixture. and

4.  Cook the flour and onion mixture for 1 minute whisking constantly.

    5.  While whisking, slowly pour in the milk. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick.  Remove the pot from heat. Stir in salt, black pepper, cayenne pepper, 2 cups cheddar cheese, and 1 cup mozzarella or 1/2 cup Parmesan cheese; set cheese sauce aside.

      6.  Add the cooked macaroni to the cheese sauce and stir to coat the macaroni thoroughly.

7.   Pour mixture into the prepared dishes. Sprinkle remaining 1/4 cup cheddar cheese, and breadcrumbs over top. Bake until browned on top, about 30 minutes. Transfer the dishes to a wire rack to cool 5 minutes; serve hot.
