Red Pepper and Chorizo Quesadillas

 I love Mexican food.  It has to be one of the simplest foods to create.  One of the best things about it is that it is easily adaptable to suit any taste.  You may be surprised to find that such a thin meal can be so filling but I find that quesadillas are just that, filling.  Depending on the amount of cheese you add to yours quesadillas are healthy and easy to assemble.  If you are looking for a quick and super delicious dinner or lunch idea this is a great option.  The filling for these quesadillas is scrumptious, the chorizo sausage really adds a little kick to every bite.

Ingredients and Directions for Red Pepper and Chorizo Quesadillas

1.  Ingredients

   8 flour tortillas

4 tablespoons of olive oil

    1 chorizo sausage, coarsely chopped

1/2 cup button mushrooms, sliced

1/2 small onion, sliced

1 red bell pepper, cut into slices

3 green onions, thinly sliced

2 cups shredded cheddar cheese

Prepared salsa, sour cream and jalapenos for serving.

To prepare the Red Pepper and Chorizo Quesadillas

Preheat oven to 400 F. 

2.   In a non-stick fry pan over medium heat, 1 tablespoon oil.  Add the onions, stirring occasionally, until lightly golden, about 5

minutes.

3.  Add the mushrooms, red pepper, and chorizo and  cook, stirring occasionally, until the vegetables are tender about 6 to 8 minutes.

    Brush one side of tortillas with remaining tablespoon oil. Place 4 tortillas, oiled sides down, on two baking sheets.

4.  Layer each tortilla with cheese, chorizo mixture, and more cheese, dividing evenly.

5.  Top more cheese and then with the remaining 4 tortillas, oiled sides up, and lightly press to seal.

      6.  Bake until cheese has melted and tortillas are golden brown, turning them once, about 10 minutes. To serve, cut quesadillas into

quarters and serve with salsa, sour cream and jalapenos.

    What a great filling and presentation!

    Whenever I see/hear the word “quesadillas”, I hear Napoleon’s granny (from the movie Napoleon Dynamite) saying:
    “Knock it off and make yourself a dang quesadilla, Napoleon!” 🙂

    Great recipe– Quesadillas are one of the easiest meals to prepare, and so satisfying too!

    I really like how you explained everything so clearly– especially the image with photos of every step!
