Double Mocha Cupcakes with Espresso Frosting

I am beginning to wonder when this cupcake ‘thing’ is going to wear off.  I never tire of cupcakes, is that weird?  I not only love making them I love eating them.  Who doesn’t love cupcakes?  We have a sign at work that says, “Everyone stay calm and eat cupcakes”.  It is fitting for just about any circumstance or situation 🙂

These Double Mocha Cupcakes are delicious.  They are a light and tender cupcake with an espresso butter cream frosting.  I find that a lot of times when things are made with coffee or espresso you can never really taste it.  It is as though the flavor is baked out.  This is definitely not the case here, the coffee flavor is evident in both the cupcake and the frosting which is exactly what you want to achieve.

1.  Ingredients

1 1/3 cups flour

1/3 cup unsweetened cocoa powder

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 cup  milk

1/2 cup strong brewed coffee

1 1/2  teaspoons espresso powder

1 teaspoon vanilla

1/2 cup butter, room temperature

1/2 cup sugar

1/2 cup brown sugar

1 egg, room temperature

To Prepare the Mocha Cupcakes

Preheat the oven to 350 F. Line a standard-size muffin tin with paper liners.

 2.  Whisk together the flour, cocoa powder, baking powder, and baking soda.

Mix the espresso powder into the brewed coffee until dissolved; set aside to cool to room temperature.

3.   Beat the butter and both sugars together on medium-high speed until light and fluffy, about 2-3 minutes.  Add the egg and beat until combined.

4.  In a measuring cup, combine the milk, brewed coffee mixture and vanilla.

5.  Slowly add the flour mixture, alternating with the coffee mixture, ending with the flour mixture.

6.  Scrape down the sides of the bowl to incorporate completely.

7.  Divide the batter evenly between the 12 liners. Bake for 17-20 minutes or until a toothpick inserted in the center of a cupcake comes out clean. Cool completely before frosting cupcakes.

For the Espresso Butter Cream

8.  Ingredients

1 cup butter, at room temperature

2 1/2 cups icing sugar

1 1/2 teaspoons vanilla

1 1/2 teaspoons espresso powder

To Prepare the Espresso Butter Cream Frosting

Mix the espresso powder into the vanilla until dissolved; set aside.

9.  Using the whisk attachment of a stand mixer, whip the butter on medium-high speed for 5 minutes, stopping once to scrape the sides of the bowl.

10.  Reduce the mixer speed to low and add the icing sugar a little at a time, waiting until it is mostly incorporated before adding more. Once all of the powdered sugar has been added, scrape the sides of the bowl and increase the speed to medium-high and whip until fluffy, about a minute or two. Add the espresso and vanilla mixture and continue to mix at medium-high until it is completely incorporated, scraping the sides as necessary.

Note: To make the swirls on the cupcakes, use a Wilton 1M decorating tip.

    I am a coffee and chocolate fan so these sound wonderful to me. Your sign at work would certainly make me smile.

    Also, I love the box that you made with the photos in it – very clever. I have just mastered putting photos side-by-side so I don’t think I am ready for this yet, but it looks great.

    Love the bright colors against the black background. Nice choice in cupcake flavors. Cupcakes will be a main stay in my house. Great post.

    I love everything about these cupcakes! The recipe sounds perfect I just might make them today. Your photos are amazing they make me want to take a bite.
