This is not your traditional Chicken Gyro, obviously, it is not in a pita.  Initially I had intended on doing traditional Chicken Gyros, I had a problem with my pitas though.  I had a terrible craving for these wonderful things and I really didn’t want to toss the entire idea aside.  So, I improvised 🙂 I really, really enjoyed the outcome because unlike the pita version this is a wrap, much neater to eat!  Which is always a plus.  I used the tzatziki that I had leftover from the dip I made and then cut up some chicken strips.  It is another Mediterranean inspired meal that is very light and healthy, oh and it’s super quick to make too!

1.  Ingredients


For the Chicken

4 cloves garlic, smashed

Juice of 1 lemon

2 teaspoons red wine vinegar

1 tablespoon extra virgin olive oil

2 heaping tablespoons plain yogurt

1 tablespoons dried oregano

Salt and pepper, to taste

2 chicken breasts, boneless and skinless

For Assembling

Tortilla wraps

Lettuce, shredded

Fresh tomatoes, seeded and diced

Red onion, sliced thin

To Prepare the Chicken

2.  Combine the garlic, lemon juice, red wine vinegar, olive oil, yogurt, oregano, and salt and pepper in a medium bowl.  Whisk together until mixed well.

3.  Add the chicken pieces to the bowl and mix well to coat. Transfer to a ziplock bag and refrigerate for about 1 hour.

Cook the chicken as desired, either in the skillet or with the broiler.  (I sliced the chicken breasts into strips and then cooked them under the broiler.)  Once the chicken is completely cooked through, transfer to a plate and let rest for 5 minutes.

4.  Heat the tortilla shells, briefly.   Top with chicken.

5.  Add the diced tomatoes, lettuce and sliced onions.

6.  Add the tzatziki sauce.  Roll the wrap to enclose the contents.

Serve immediately.

These wraps are delicious.  They are so simple to make which is great for entertaining.  They would make a great accompaniment to a sandwich platter served at a buffet.  If you are invited to a potluck this summer, you should consider bringing these, they’ll love them 🙂
