Spicy Pineapple-Mint Salsa

There is nothing more refreshing than fruit salsas.  They are perfect for summer time side dishes or stand alone meals.  They are quick and simple to make and there is no cooking required which makes them wonderful for hot summer days.  This salsa is amazing!  It has a little bite to it but if you don’t like spicy it is easily adjusted by using less peppers or none at all.  The combination of pineapple and mint is a new one for me but it is soon to be a familiar one.  I really enjoyed the zing of the pineapple and the cool refreshing taste of the mint.  This is a very healthy dish.  The pineapple is loaded with vitamin C and the mint is great for soothing the digestive tract, I’m not sure you could ask for more from a salsa, could you?  Besides being good for you it is very tasty and completely refreshing.

Ingredients and Directions for Spicy Pineapple-Mint Salsa

1.  Ingredients

  1/2 red onion, thinly sliced

1 or 2 serrano chiles, seeded for less heat, and very thinly sliced

1/2 red bell pepper, thinly sliced

1 small garlic clove, minced

1 tablespoon freshly squeezed lime juice (1 lime)

1 pineapple, peeled and chopped into 1/2-inch pieces

1 teaspoons extra-virgin olive oil

1 cup loosely packed fresh mint leaves

To Prepare the Salsa

2.   In a medium bowl, combine the onion, chiles, garlic, lime juice, and pineapple. Add oil; stir to combine. Let stand at room temperature for at least 15 minutes or up to 1 hour.  Just before serving, add the mint; toss to combine.

Makes 3 cups
