Mediterranean Chicken Wrap

I really enjoy making wraps.  They are easy to make and there are so many different things you can do with them.  This is another Mediterranean inspired dish.  I am quite fond of Mediterranean cooking because it is light and healthy.  It incorporates a lot of fresh produce and uses lots of lemons and olives which are two of my favorites.


1 boneless and skinless, chicken breast

salt and ground pepper, to taste

1 whole-wheat wrap, 10 inches

1 tablespoon olive tapenade

1/2 small tomato, thinly sliced

1/8 small red onion, thinly sliced

1/4 red pepper, thinly sliced

1/4 cup mixed baby greens

To Prepare the Mediterranean Chicken Wrap

Heat broiler with rack 4 inches from heat. Season chicken with salt and pepper and broil until opaque throughout,  about 4 to 5 minutes; allow to cool.
Spread bottom of wrap with the olive tapenade. Layer with chicken, tomato, red onion, red pepper and baby greens; season with salt and pepper. Fold tortilla to seal.

Makes 1 wrap

If you are looking for ways to incorporate more veggies into your diet wraps are a wonderful way to do just that.  Wraps are great for lunches or even light dinners.
