So, here’s the thing.  If anyone ever tries to convince you that just because something is ‘gluten-free’ it means that it’s healthy you may rest assured that the person is lying.  Gluten-free is wonderful for a great many reasons, but sugar is sugar, eggs are eggs, butter is butter.  Just because you replace flour with a different type of flour doesn’t mean you are removing calories or fat content.  Just be forewarned.  Gluten-free does not equal healthy, okay.

All that aside, I have to tell you something else.  These chocolate truffle brownies are awesome.  They are chewy and chocolaty.  These brownies are great on their own or served with ice cream.  The other amazing thing these brownies have going for them is that they are made with quinoa flour, so they are gluten-free 🙂  I am still having a great time experimenting with quinoa flour and seeds.  I am still in awe with all the amazing benefits it holds.  Still not sure about quinoa?  You really should look into it, it can be used for so many different things.

Ingredients and Directions for Chocolate Truffle Brownies

1.  Ingredients

4 oz unsweetened chocolate, chopped

3/4 cup butter

1 1/2 cup sugar

3 large eggs

2 teaspoons vanilla

1 1/4 cup quinoa flour

1/4 cup milk

1 cup chopped pecans or walnuts

To Prepare the Chocolate Truffle Brownies

Preheat oven to 350 F.  Lightly spray or grease a 9 inch square baking pan and lightly sprinkle with flour or line with parchment paper.

2.  In a small saucepan, melt the chocolate and the butter together over low heat.

3.  Add the sugar, stirring constantly.  When the mixture is thoroughly blended, pour into a large bowl.

4.  Add the eggs and vanilla to the chocolate mixture and blend well.

5.  Stir in the flour and milk.

6.  Mix in the nuts.

7.  Pour evenly into the baking pan.

Bake on the center rack for 20-22 minutes.  To keep these brownies chewy, be careful not to overbake.  Cool for 15 minutes in the pan before cutting into 16 squares.

If you have loved ones that are gluten intolerant it is great to be able to bake things that will satisfy everyone’s needs.  Quinoa is a great substiute for flour and is not difficult to work with.  Don’t be afraid to give it a try, I think you’ll really enjoy it 🙂

    These look really rich and chocolatey-but I can tell myself it is healthy with that quinoa flour! I have never worked with that flour but might give it a go. thanks for sharing.
