Cappuccino Brownies

It is a combination that will never go out of style.  Chocolate and coffee.  These brownies consist of three layers, a brownie base, with a coffee-with-cream layer and a chocolate ganache topping.  If you love brownies you’ll love these.  They are packed full of chocolatey sweetness.  The cappuccino layer adds a great coffee taste that will have you hooked and going back for more.  You could use your favorite brownie recipe instead of the one below if you like.  These brownies are the same concept as the Peanut Butter Crunch Brownies in that they are a basic brownie base topped with more chocolatey goodness.  You have to try these brownies, they are addictive.

1.  Ingredients

For the Brownie Layer

1/2 cup butter

3 ounces unsweetened chocolate, cut up

1 cup sugar

2 eggs

1 teaspoon vanilla

2/3 cup flour

1/4 teaspoon baking soda

For the Cappuccino Layer

1 teaspoon instant coffee crystals

1 tablespoon whipping cream

1 cup icing sugar

2 tablespoons butter. softened

For the Chocolate Topping

1 cup chocolate chips

1/3 cup whipping cream

To Prepare the Brownies

Preheat oven to 350 F.  Grease a 8x8x2-inch baking pan; set aside.

2.  In a saucepan heat and stir the 1/2 cup butter and chopped chocolate over low heat until smooth.  Remove from heat; cool slightly.

3.  Stir in the sugar.  Add the eggs, one at a time, beating with a wooden spoon just until combined.  Stir in the vanilla.

4.  In a small bowl stir together the flour and baking soda.

5.  Stir the flour mixture into the chocolate mixture just until combined.

6.  Spread the prepared batter in the baking pan.  Bake for 30 minutes.

To Prepare the Cappuccino Topping

Dissolve the coffee crystals in the whipping cream.

7.  In a small mixing bowl beat the icing sugar and 2 tablespoons of butter on medium speed until combined.

8.  Beat in the whipping cream mixture until creamy.  If necessary, beat in additional whipping cream until topping is of spreading consistency.

9.  Spread over the warm brownies.  Chill for about 1 hour or until the topping is set.

To Prepare the Chocolate Topping

In a small saucepan heat and stir 1 cup chocolate chips and 1/3 cup whipping cream over low heat until smooth and the mixture begins to thicken.

Carefully spread the chocolate topping over the brownies.  Chill for 30 minutes or until set.  Cut into 16 squares or 32 triangles.
