White Chocolate Strawberry Rhubarb Trifles

What do you get when you combine Cream Cheese Pound Cake, Homemade Strawberry Rhubarb Jam and White Chocolate Mousse?  I’ll tell you what you get.  You get some truly amazing trifles out of the deal, fact.  I had leftovers.  I always have leftovers.  Leftovers are a great way to really get creative with your food.  It’s one thing to bake something, it’s quite another to use it again in another dessert.  I think it takes a great imagination to come up with ways to utilize the leftovers in your refrigerator.

You can use so many different ingredients when constructing a trifle.  It is all about the presentation of the layers.  Using different cakes and fruits really makes this a versatile dessert for any occasion or if you are trying to use up odds and ends.  This is such a simple dessert to make and would make a wonderful family project as the trifles may be personalized to each person’s taste!

You can make trifles in a large bowl or you can make them in individual dishes.  The word “trifle” comes from the old french word “truffle”, and literally means something whimsical or of little consequence.

White Chocolate Strawberry Rhubarb Trifles

2 cups crumbled Cream Cheese Pound Cake

1 cup fresh sliced strawberries

3/4 cup strawberry rhubarb jam

1 1/2 cups white chocolate mousse

To Prepare the Trifles

Place 4 clear glasses or dessert cups, something that will display all of the layers, on the counter.  Place a layer of the cream cheese pound cake in the bottom of the glasses.  Cover the cake layer with a layer of strawberry rhubarb jam, place a layer of the sliced strawberries on top of the jam.  Add a layer of white chocolate mousse on top of the berries.  Repeat this process until the glasses are full.  Top with white chocolate mousse and more strawberries.  Cover the prepared trifle and place in the fridge overnight.
