I’ve been on a little bit of a health kick lately.  I took a look back at all the things I have been making and realized it was a lot of sugar.  So, I decided to cut back a little.  Lighten up.  Make some changes you know?!  Nothing serious, nothing too major.  These muffins were the result of my change.  They are light and healthy.  They do not require a lot of sugar, in fact, you could even cut back if you like.  They are low fat and do not require any fat.  Are you liking all that?  Of course you are, it is summer time.  These muffins are so moist and tender you were think you were over indulging but you need not worry, I got you covered.  The best part about these muffins is that they are made with quinoa flour.  Quinoa flour is wonderful.  If you can, you really should try to incorporate it into your diet more often.  It is a great source of protein and is loaded with all sorts of great vitamins.  The second best part is that they are mini, my personal favorite.

1.  Ingredients

1 1/3 cup quinoa flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons ground cinnamon
2/3 cup chopped hazelnuts
2 large eggs
2/3 cup brown sugar
2/3 cup plain yogurt
2 1/4 cup grated carrot

To Prepare the Muffins

Preheat the oven to 350°F.
Lightly spray with cooking oil two 12 cup mini muffin pans and set aside.

2.  In a large bowl, whisk together the eggs, brown sugar and plain yogurt.  Stir in the grated carrot.

3.  In a medium bowl, combine the flour, baking powder, baking soda, and ground cinnamon.
Stir until well-blended. Mix in the hazelnuts and set aside.

4.  Using a spatula, gently stir the flour mixture into the carrot mixture until just blended.

5.  Scoop the batter evenly into the muffin cups. Bake for 20-24 minutes until an inserted toothpick comes out
clean. Remove the muffins from the oven and allow them to cool completely before removing
them from the pan.

Optional:  Cream Cheese Frosting

Makes 24 mini muffins or 12 regular muffins
