Cantaloupe, Spinach and Walnut Salad

Melons in salad?  Really?!  Yeah, why not.  I made a really great salsa the other day and it was lacking a little color and a slight sweetness.  I had already added an apple so I thought why not throw in a little cantaloupe.  WOW!  What an amazing taste.  Melons have so much flavor and offer a lot of vitamins and nutrients.  They are low in calories and have a high water content.  What’s not to like about melons, right.  This salad is delicious.  It’s really simple to make and takes no time at all.  It’s light and refreshing.  It won’t leave you feeling heavy but rather invigorated and light.  The walnuts in the salad add a lot of crunch and are packed with omega-3’s!


For the Orange Vinagirette

1/4 cup fresh orange juice

1 tablespoon freshly squeezed lemon juice

1 1/2 tablespoons balsamic vinegar

3 tablespoons extra-virgin olive oil

salt and pepper to taste

For the Salad

1 cantaloupe, cut into 1-inch cubes

1 small red onion, thinly sliced

2 cups baby spinach

1 cup chopped walnuts, toasted

To Prepare the Vinaigrette

Combine the orange juice, lemon juice and balsamic vinegar in a small bowl.  Slowly add the olive oil, whisking constantly until the mixture is smooth.  Season with salt and pepper to taste.

To Prepare the Salad

Combine the cantaloupe, red onion, spinach and 1/2 cup of the walnuts in a large salad bowl.  Pour the dressing over the salad and toss well.  Garnish with the remaining walnuts.

Serves 4-6
