It’s that time of summer, when it’s too hot to do anything.  I love summer.  I love the sun.  I just don’t like eating when it’s really hot.  It can be uncomfortable.  It is important to eat though that’s why salads and salsas are perfect for summer.  Salsas are so simple to make.  You can add anything that you like to them and they will taste amazing.  I always thought of salsas as the tomato based versions but there are so many different variations that you can make.  Fruit salsas are wonderful in the summer as well they may be served as a side dish or an afternoon snack when it is too hot to eat anything but clean, fresh, crisp fruits and vegetables.  Salsas are so light and nutritious.  This Spicy Pineapple-Mint Salsa is loaded with vitamin C and all sorts of healthy stuff.  Salsas may be served as a dip for nacho chips or as a garnish or side dish to chicken or grilled fish due to the sauce’s gamut of complementary flavors.

Ingredients and Directions for Cucumber Salsa

1.  Ingredients

1 1/2 cups cucumber, diced

1/2 cup cherry tomatoes, sliced in half

1/2 cup red onion, diced

1/2 cup red, yellow or green peppers, diced

1/2 cup tart apple, diced

1/2 cup cantaloupe, diced

1 clove garlic, minced

3 tablespoons fresh dill, finely chopped

1 tablespoon fresh cilantro, chopped

1 jalapeno pepper, minced (add a few seeds at a time to determine how much heat you would like or omit the seeds completely)

1 tablespoon fresh lime juice

1 tablespoon fresh lemon juice

salt and pepper to taste

To Prepare the Salsa

2.  In a medium mixing bowl, combine all the ingredients together.  Adjust the seasoning.  Refrigerate for at least 3 hours before serving.

Makes 3 cups
