Raspberry Layered Dessert

Do you remember my variation on Strawberry Ribbon Dessert?  I made the dessert in individual shot glasses for entertaining purposes.  This is the other variation to the dessert.  I think this is the way it was intended to be served.  It’s wonderful, either way.  This variation is less time consuming and quite easy to prepare.  If you would like your layers to be thicker I would suggest an 8 x 8 pan rather than a 13 x 9.  This dessert is actually a Kraft recipe that I saw a few days ago.  I don’t usually make Kraft recipes but every once in a while there is one that I just have to try.  This is definitely one for the archives.  It is simple, easy, light and delicious!

Ingredients and Directions for Raspberry Layered Dessert

1.  Ingredients

2 cups graham crumbs
1/2 cup margarine, melted
1/2 teaspoon ground cinnamon
1 – 8 oz. package cream cheese, softened
1/4 cup icing sugar
3 cups thawed Cool Whip Whipped Topping, divided
1 cup boiling water
2 packages Jell-O Raspberry Jelly Powder
3 cups frozen raspberries (Do not thaw)

To Prepare the Raspberry Layered Dessert

2.  Mix the graham crumbs, margarine and cinnamon. Reserve 2 tablespoons; press remaining onto bottom of 13×9-inch pan.
Beat cream cheese and sugar with mixer until well blended. Stir in 1 cup Cool Whip;
  Spread onto crust. Refrigerate until ready to use.
Add the boiling water to the jelly powders; stir for 2 minutes.   Add the berries; stir until thickened.
  Pour over cream cheese layer. Refrigerate 30 min. or until set but not firm.Cover with the remaining Cool Whip and reserved crumb mixture. Refrigerate 3 hours or until firm.

This dessert is perfect for hot summer afternoons.  Prepare it in the morning when it’s cooler and enjoy it in the afternoon when it’s hot.
