Crustless Red Pepper, Ham and Feta Quiche

Do you ever stand in front of the fridge and just gaze?  I try not to do it often, simply because electricity is expensive and I don’t like to waste.  Every once in a while I am standing there staring at food wondering what to do with it.  Leftovers can prove to be a challenge sometimes especially when they don’t make sense.  Mashed potatoes and white kidney beans don’t make sense, what do you do with that match?  Well, it turned into gnocchi and the white kidney beans haven’t been used yet, any ideas?

This quiche was simply leftovers from my ham pies.  I added a couple more eggs and a little whipping cream, buttered a pie plate and voila!  Quiche!  I love quiche because it really is that simple.  Crust or no crust, it is so delicious.  Quiche is really whatever you want it to be.  I really just didn’t want to waste what I had leftover and I really love quiche cold for breakfast the next day.

1.  Ingredients

75 grams thinly sliced ham, chopped

1 red pepper, thinly sliced

1-2 green onions, finely chopped

125 grams feta cheese

1/2 teaspoon flour

2 teaspoons milk

1 teaspoon olive oil

4 eggs

1/2 cup whipping cream

2 tablespoons fresh parsley, finely chopped

4 tablespoons chopped walnuts

1/4 cup shredded Gouda

To Prepare the Quiche

Preheat oven to 375 degrees F.  Butter a 9-inch pie dish and set aside.

2.  In a non-stick fry pan, saute the onions lightly in the olive oil.  Add the chopped ham, the sliced red pepper and the parsley.  Saute for a   further 10 minutes stirring with a spatula.

3.  Sprinkle the flour into the pan and let it cook for a while longer.  Stir in the milk and remove from heat.

4.  In a glass measuring cup whisk together the eggs and whipping cream until well combined.

5.   Spoon the ham mixture evenly into the buttered pie dish.

6.  Sprinkle with the walnuts and cheese.

7.  Pour in the egg mixture.

Bake the quiche until puffed and golden brown, about 35 minutes.  Serve warm or at room temperature, cut into generous wedges.
