Raspberry Cream Cheese Breakfast Buns

In general when someone tells me that something is really great I tend to be a little skeptical.  Depending on the source I often find myself wondering, ‘how good it could really be’.  I was told these breakfast buns were a definite must do.  My source was wise to advise me of this.  They are absolutely delicious.  They are so tender and moist.  They aren’t overly sweet and to top it all off they are really quite beautiful to look at with the marbling on top.

Breakfast buns are a lot like a muffin mixed with a cake.  They are delectable little treats to have any time of day but with the jam swirled throughout the bun it makes them perfect for breakfast.

Raspberry Cream Cheese Breakfast Buns

Ingredients

Bun

1 3/4 cup flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 pound (one 8-ounce package) cream cheese, softened

1/2 cup butter, softened

3/4 cup sugar

2 eggs, room temperature

1/4 cup milk

1/2 teaspoon vanilla

Topping

1/2 cup raspberry preserves

Garnish

Confectioner’s sugar

To Prepare the Breakfast Buns

Preheat oven to 350 F.

Grease and lightly flour 9 bun pans or large muffin cups.

In a small bowl, combine the flour, baking powder, and baking soda.  Set aside.

In a large bowl , on the medium speed of an electric mixer, beat together the cream cheese, butter, and sugar until smooth, about 3 minutes.  Add the eggs and beat well.  Add the dry ingredients in two parts, alternating with the milk and vanilla.  Spoon the batter into the bun pans or muffin cups, filling them about two-thirds full.  Drop 3 small dollops (about a teaspoonful each) of raspberry preserves onto the top of each bun and, using the tip of a sharp knife, swirl the preserves into the batter, forming a decorative pattern.  Bake for 20-25 minutes, or until a toothpick inserted in the center of the bun comes out clean.

Allow the buns to cool for about 30 minutes before sprinkling with confectioner’s sugar and serving.

Makes 9 Buns or 12 Muffins

    Cream cheese is a great ingredient for muffins. The cream cheese makes them so moist-it almost guarantees that the muffin will be tasty. These look stunning. thanks for sharing.
