Easy Broccoli and Lemon Pasta

There will be times this week where you feel busy or rushed and that’s okay.  You can find comfort in knowing that you can still eat healthy and balance things out.  Just because you are in a rush or have no time doesn’t mean you have to eat poorly.  This pasta dish will take you under 20 minutes to throw together.  There is nothing really fancy about it, it’s simple but tasty.  This is the type of meal that you can truly make your own by adding any vegetable you choose.  You can also use a variety of different cheese to adjust the flavor as well.  Just because you are in a hurry or you are feeling pressured doesn’t mean you can’t eat a well balanced, delicious meal.

Easy Broccoli and Lemon Pasta

2 cups pasta

1 cup broccoli florets

2 cloves of garlic

1/2 cup grated Parmesan cheese

fresh basil, roughly chopped

1 lemon

1/4 cup olive oil

To Prepare

Cook pasta in boiling salted water.  When pasta is al dente, drain.  Meanwhile, in a non-stick fry pan over medium-high heat add the olive oil.  When the oil is hot add the garlic.  Saute the garlic for a few minutes until fragrant.  Add the broccoli to the pan and cook for a few minutes.  Return hot pasta to the pan.  Douse liberally with olive oil and fresh lemon juice.  Add lemon zest if you’d like.  Sprinkle generously with fresh chopped basil and parmesan cheese.  Season with salt and pepper to taste.

For some  thing a little extra add chicken.  Add grilled steak.  Add roasted cherry tomatoes.  Throw in some mushrooms. Thyme. Oregano.  More cheese.
