If there is one thing that my lovely mother-in-law has taught me it is how to utilize everything when working in the kitchen.  “Waste not, want not” is her motto and for good reason.  With food prices continuing to rise it is important to take care when working in the kitchen.  Everything may be used for something, it is just a matter of being creative and looking at things through a different lens.  Take, for example, these raspberries n’ cream wonton cups.  They were my way of using up the leftover wonton cups I had from the mango-curry shrimp salad in wonton cups.  I love to create new desserts or dishes from leftovers it makes me feel as though I have really accomplished something without having to run out and purchase new ingredients.  It is an art.

Raspberries n’ Cream in Wonton Cups

Ingredients

12 wonton wrappers, each cut into 4 squares

2 tablespoons olive oil

To Prepare the Wonton Cups

Preheat the oven to 325 F.  Place the wonton squares on the work surface; brush lightly with oil.  Press each into a mini muffin cup, oiled side down.  Bake until the wonton cups are golden brown, about 10 minutes.  Cool completely in tins.

Note:  The wonton cups may be prepared up to 3 days in advance.  Remove the cups from the tin and store in an air tight container at room temperature.

For the Cream Filling

1/4 cup cream cheese, softened

1/4 cup sour cream

1/2 cup whipping cream

1/2 teaspoon vanilla

1 tablespoon sugar

To Prepare:

In the bowl of your electric mixer beat the cream cheese and sour cream until smooth.  Add the whipping cream, vanilla and sugar and beat until soft peaks form.

For the Topping:

1/4 cup raspberries

To Prepare:

Wash the berries, drain and dry.  Spoon a teaspoon of the cream filling into each cooled wonton cup and then place one raspberry in the center of each cup and serve.

Makes 48 wonton cups

These one bite desserts are perfect for parties and entertaining.  Your guests will have them gobbled up in no time flat 🙂
