Baked Sweet Potato Fries

Sweet potatoes were never on the top of my favorite vegetable list.  I have only ever had sweet potatoes at Thanksgiving and Christmas, I didn’t even know you could have them year round.  I don’t get out much.  Recently when I was out with a friend for lunch we had a smoked salmon clubhouse sandwich with sweet potato fries.  They are amazing!  The fries that we had for lunch were deep fried so they were crispy and sweet.  These sweet potato fries are baked so they don’t get deep fryer crispy but they do get crispy.  I have found a new favorite to add on to my vegetable list 🙂

Baked Sweet Potato Fries

Ingredients

2 medium sweet potatoes, peeled

2 tablespoons olive oil

1 tablespoon light brown sugar

1/2 teaspoon salt, plus extra for sprinkling

1/2 teaspoon freshly ground black pepper

To Prepare

Preheat the oven to 450 F.

Halve the sweet potatoes lengthwise and cut each half into 3 long spears.  Place them on a sheet pan and toss with olive oil.  Spread the potatoes in one layer.  Combine the brown sugar, salt, and pepper and sprinkle on the potatoes.  Bake for 15 minutes and then turn with a spatula.  Bake for another 10-15 minutes, until lightly browned.  Sprinkle lightly with salt and serve hot.

Sweet potato fries are delicious!  You really do need to try them, they are a great alternative to the traditional potato fry.
