Do you remember the Cranberry Mincemeat I suggested you give away as gifts?  I thought you would.  The stuff is pretty unforgettable.  Before you give it all away you have to try some for yourself.  Have you tried your homemade cranberry mincemeat yet?  If you haven’t tried your cranberry mincemeat you have too make these little tarts and try it.  I mean honestly, you can’t give away a food item without trying it for yourself, right?!  Who does that?

Cranberry mincemeat tarts are so easy to make.  You simply make and bake the crusts and then fill with the mincemeat.   You can make them really pretty by using a star cookie cutter and placing a star on top of the filling.  If you like the star idea you will need to bake the tarts again for a few minutes to bake the star, but that’s no biggy.  If you are feeling as though that might be too much work you could always buy the pre-made tart shells and just be done with it 🙂

Ingredients

Short Crust Pastry

Cranberry Mincemeat

To Prepare

Prepare the Cranberry mincemeat as directed and allow to cool completely.

Preheat oven to 350 F.

Prepare the short crust pastry as directed.

While the pastry is chilling line a baking sheet with parchment paper.  Once the pastry dough is chilled, cut into four equal quarters.Roll each quarter out into a circle.

Place the rolled out circles into the 4 inch individual tart tins.

Trim the excess pastry off with a knife, cover and place back in the fridge while you cut out the stars.  Once the tart shells have chilled fill them with a piece of parchment paper and fill with pie weights, rice or beans.  Bake the tart shells for about 10 minutes.  Remove the parchment filled liners and then return to the oven to continue baking until golden brown, about 3-5 minutes.  Once baked remove from oven and allow to cool completely.

Once the tart shells are cool fill them with 2-4 tablespoons of cranberry mincemeat filling then top with a pasty star and bake for an additional 5-10 minutes until the star is golden brown.
