Well, this is it!  Tonight is the big night!  Are you excited?  I am a little excited.  Why wouldn’t I be excited, it’s a fresh start, a new year of awesome opportunities all to come our way.  Yeah, I’m excited.  I am not doing the whole resolution thing though.  I like to maintain an ongoing list of things I would like to accomplish rather than wait for one day of the year to try to start something new.  That’s just me.

I thought that it would be a really awesome idea if you and I could have a cocktail to celebrate the New Year.  This cocktail is perfect for tonight.  It may be served with or without alcohol which is always a wonderful idea, to have options for all your guests.  I absolutely love this punch!! It is so festive, sweet, and tart all at the same time.  I think it is the perfect way for me to say thank you to all of you wonderful readers who make this all worth while 🙂

Apple Cider, Cranberry, and Ginger Punch

Ingredients

1/3 cup fresh cranberries

2 tablespoons sugar

1 1/2 cups fresh apple cider

2/3 cup chilled ginger beer

2 tablespoons fresh lemon juice

3 1/2 ounces (1/4 cup plus 3 tablespoons) gin, (optional)

To Prepare

Muddle cranberries with sugar in a pitcher. Add apple cider, ginger beer, lemon juice, and gin if desired. Divide amongst 4 glasses. Serve chilled or over ice.

This punch is so delicious and not to mention healthy.  This drink is also really satisfying on cold days, the aroma from the ginger and cider is like a warm hug.
