Quinoa is a pseudocereal rather than a true cereal, or grain, as it is not a member of the grass family. As a chenopod, quinoa is closely related to species such as beets, spinach, and tumbleweeds.  It is a grain that is growing in popularity along with the gluten-free population.  Not only is quinoa great for the gluten-free population, it’s good for the rest of us too!  It is a grain rich in protein.  Are you a vegetarian?  You should be eating quinoa on a regular basis!

I am not overly experienced when it comes to cooking with quinoa but there is really nothing to it.  It is easy to cook and there are so many things that you can do with it when its done.  Do you remember when I made Breakfast Quinoa with Toasted Coconut, Walnuts and Fresh Peaches?  This is an excellent example of quinoa’s versatility.

This Moroccan Quinoa Salad is light, healthy and nutritious!   It is loaded with all sorts of great flavor and you will feel absolutely amazing when you finish eating it because it’s good for you 🙂

Moroccan Quinoa Salad

Ingredients

3 cup cooked quinoa (1 cup dried)
1/3 cup freshly squeezed lemon juice (about 2 lemons)
3 tablespoon olive oil
2 teaspoon ground cumin
1/2 each of a green and orange pepper, diced
1-1/2 cup canned black beans, rinsed
1-1/2 cup corn kernels (about 2 cobs) or defrosted frozen
1/2 small red onion, thinly sliced
1 pint cherry tomatoes, quartered
1/2 cup slivered almonds, toasted
1/4 cup chopped fresh mint
1/4 cup chopped fresh coriander

To Prepare

Cook quinoa, according to package instructions.
While quinoa is cooking, whisk together lemon juice, olive oil, cumin, salt and sugar into a vinaigrette in a small bowl.
Combine quinoa and all remaining ingredients, except fresh herbs, into a medium-sized bowl.
Drizzle with vinaigrette. Toss to combine.
Refrigerate for at least one hour to allow flavours to combine. Add fresh herbs just prior to serving. May be served at room temperature.

This salad leaves you feeling light and refreshed.  I find quinoa very filling and satisfying.  There is nothing quite like being nourished from the inside out.
