Valentine’s Day is nearing, do you have an idea of what you are going to do for your special someone?  I have a wee suggestion for you, if I may.  Why not make your special someone a lovely baked from scratch handwritten chocolate cupcake?  Great idea, or what?!  There is no better way to say “I love you”.

These cupcakes are moist, tender and chocolatey.  As if that wasn’t enough to draw you in, you only need one bowl to make them!!  HA, no mess, well a little mess but only one bowl!!  I made these in the mini version because I love mini.  If you intend on handwriting rather than printing your message you may want to consider that when determining your size. The cupcakes are dipped in a chocolate glaze once cooled and then you allow them to set for about 30 minutes and continue with your writing.  This cupcake would be a great weekend project for the family 🙂

Mini Handwritten Valentine Cupcakes with Chocolate Glaze

Ingredients

3/4 cup unsweetened cocoa powder
1 1/2 cups all-purpose flour
1 1/2 cups sugar
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
3/4 teaspoon salt
2 large eggs
3/4 cup warm water
3/4 cup buttermilk
3 tablespoons safflower oil
1 teaspoon pure vanilla extract

To Prepare

Preheat oven to 350 F degrees. Line three mini muffin tins with paper liners; set aside. Sift together cocoa powder, flour, sugar, baking soda, baking powder, and salt into a large bowl. Add eggs, warm water, buttermilk, oil, and vanilla, and mix until smooth, about 3 minutes. Scrape down the sides and bottom of bowl to assure batter is well mixed.
Divide batter evenly among muffin cups, filling each 2/3 full. Bake until tops spring back when touched, about 10 minutes, rotating pan once if needed. Transfer to a wire rack; let cool completely.

Note

Cupcakes will keep, covered, for up to three days.

Chocolate Glaze

Ingredients

       2/3 cup heavy cream
4 ounces bittersweet chocolate, finely chopped
1 tablespoon corn syrup

To Prepare

Heat cream in a small saucepan over medium heat. Place chocolate and corn syrup in a small bowl. Pour hot cream over chocolate mixture, and stir until smooth. Use immediately.

To Assemble the Cupcakes
Ingredients

2 ounces white chocolate, melted

Dip tops of each cupcake in chocolate glaze, letting excess drip off. Let stand until set, about 30 minutes. Fit a pastry bag with the smallest plain round tip. Fill bag with melted white chocolate, and use to write on cupcakes. Decorated cupcakes will keep, covered, for up to 2 days.

These elegant little cupcakes will certainly make your Valentine smile!  You could even make the cupcakes into coupons.  For example, you could write “one free hug” or something along those lines 🙂

    These are a great idea!

    I can’t get baking soda here. Can I use just baking powder? How much vanilla sugar instead of extract? And can I use light syrup instead of corn syrup?

    So many questions but I have no idea on these things, I’m a novice 🙂

      You can use baking powder but you will have to use 3 times the amount, which would be 4 1/2 teaspoons, this may change the flavor of the cupcakes.

      For the vanilla sugar, I personally enjoy the flavor of vanilla and find it important when baking, I would substitute the entire 1 1/2 cups of sugar for vanilla sugar.

      As for the corn syrup, yes, you may use light corn syrup!!

    These are really perfect for Valentine’s! Everyone enjoys chocolate as well as a sweet sentiment. I am surprised that these are minis-you did a wonderful job on the lettering for these small gems. Hope you are having a great weekend!
