Grilled Chicken with Cherries, Shallots, and Arugula

When we plan our meals our protein of choice is usually chicken.  Chicken is very versatile and can be used in a lot of recipes.  It is no wonder that it can get boring after a while, you really have to be creative.

This recipe is very simple.  The only cooking you have to do is grill the chicken breast!  The rest is simply tossed in a bowl and then served!  This recipe is loaded with all sorts of vitamins and minerals that will keep your body happy all day through.  It would make the perfect lunch or dinner for two!

Grilled Chicken with Cherries, Shallots, and Arugula


1 small shallot, halved lengthwise and thinly sliced
1 teaspoon red wine vinegar
2 tablespoons extra-virgin olive oil
1 pound (2 halves) boneless, skinless chicken breast
Coarse salt and freshly ground black pepper
2 cups sweet cherries, pitted and halved
1 cup baby arugula

To Prepare

Combine shallot, vinegar, and 1 tablespoon oil and set aside.
Preheat grill to medium-high. Drizzle remaining oil over chicken. Season with salt and pepper. Grill chicken until cooked through, 5 to 7 minutes per side. Let stand for 5 minutes.
Toss shallot mixture, cherries, and arugula in a small bowl. Season with salt and pepper. Serve on top of chicken.

Makes 2 servings

 This salad is very simplistic but not at all short on flavor, it is light and lovely!

    I have LOTS of frozen sweet cherries in the freezer. I wonder if they would work OK after thawing for this salad? I am willing to give it a try!

      Let me know how it works? I know that dried cherries would work well, too 🙂
