Mango Quinoa Salad

You know.  At first, I really didn’t care for quinoa.  It was a flavor/texture issue for me.  Now, however, I love quinoa.  I really can not seem to get enough of it.  I love the texture and the flavor both of which are enhanced by the other ingredients that you can add to quinoa. Quinoa is a grain that you really should consider adding to your diet, it is absolutely amazing!

The mango lends a sweet but tart note to this colorful quinoa salad.  The salad itself may be served warm or chilled making it perfect for either the summer or the winter months.  The ingredients within the salad maybe substituted with ingredients that you have on hand.  After all, it is a salad, add whatever you heart desires!  I particularly enjoyed the corn with the mango it added a slight crunch to every bite.

Mango Quinoa Salad


1 cup quinoa
1 large tomato, seeded and diced
2 ears corn, kernels removed
1 cucumber, peeled, seeded and diced
1 mango, peeled and diced
3 tablespoons finely chopped chives
2 tablespoons fresh lemon juice
1/4 teaspoon freshly grated lemon zest

To Prepare

Rinse quinoa in a fine sieve until water runs clear, drain and transfer to a medium pot. Add 2 cups water and bring to a boil. Cover, reduce heat to medium low and simmer until water is absorbed, 15 to 20 minutes. Set aside off the heat for 5 minutes; uncover and fluff with a fork. 

Add remaining ingredients and toss until combined.

Makes 4 servings

    I just posted an article about all the benefits of quinoa and love your mango salad! I actually posted a picture from the net for something similar, but am going to edit the article and link to here and your recipe! So glad you’re a fan of quinoa. It really is a superfood!
