Quinoa and Lentil Salad

I mentioned last week that I love salad.  I also made mention of the fact that salads are what they used to be.  Salads now come in a wide variety of dishes, including vegetable salads.  You can have salads with legumes, or grains.  Other varieties of salads sometimes incorporating meat, poultry, or seafood.  And of course I must not forget fruit salads.  Some salads may include a mixture of cold and hot items.  The one common characteristic of all salads is that they including raw vegetables or fruits.

This Quinoa and Lentil salad was absolutely delicious!  The flavor was so satisfying and the ingredients thoroughly nourishing 🙂 Do you make salads?  I try to make a salad such as this on Sunday and then I have lunch taken care of for the majority of the week.  It is always wise to pack your own lunch, that way you won’t be scrambling around grabbing food that is unhealthy for you.  It is wise to be prepared 🙂

Have you hopped on the quinoa banwagon yet?  If, no, you really need to ask yourself why.  Why, are you not incorporating quinoa into your daily diet?  Not sure, why.  Allow me to persuade you.  Quinoa’s amino acid profile, according to World’s Healthiest Foods, ‘is well balanced, making it a good choice for vegans concerned about adequate protein intake, but quinoa is especially well-endowed with the amino acid lysine, which is essential for tissue growth and repair. In addition to protein, quinoa features a host of other health-building nutrients. Because quinoa is a very good source of manganese as well as a good source of magnesium, folate, and phosphorus, this “grain” may be especially valuable for persons with migraine headaches, diabetes and atherosclerosis.’  Awesome, right?!  Quinoa is always on hand in our home 🙂

If you are looking for a protein rich salad this is the one for you!  The addition of green lentils to the salad gives additional protein but also lentils are a very good source of cholesterol-lowering fiber.  To sum this up, you have to make this salad because your body will thank you for it 🙂

Quinoa and Lentil Salad
Ingredients

1 cup Quinoa
1/2 cup Green Lentils
2 tablespoons Dijon mustard
2 tablespoons red wine vinegar
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon thyme
1 shallot, minced
2 cups baby spinach
1 fennel bulb, trimmed and sliced as thinly as possible (use a mandolin if you have one)
1/2 cup diced roasted red bell pepper
1/4 cup toasted almonds
1 lemon, cut into wedges

To Prepare

Cook quinoa and lentils separately according to package instructions. Drain lentils well and set aside to let cool. In a large bowl whisk together mustard, vinegar, spices and shallot. Add quinoa, lentils, spinach, fennel and bell pepper and toss to combine. Chill until ready to serve. Garnish with almonds and lemon wedges.
